Peanut Butter Cookies

Peanut butter cookies

 1 egg                      

1 to 1 1/2 cups Splenda 

1 cup peanut butter

     Mix all three ingredients together until well mixed. Shape into little balls and then flatten them with a fork. What ever size you make them, they will stay. They do not rise. Bake on ungreased cookie sheet at 350 degrees for 7 to 8 minutes. I like to make them bite size because they are very easy to crumble.

     My husband was very surprised and pleased when he tasted them because he expects all ‘diet’ recipes to taste nasty. LOL. I got this recipe out of one of my regular cookbooks and just replaced the sugar with Splenda instead. I used the powered Splenda, not the packets. Try this with some of your own favorite recipes and let me know how it turned out.

     If you are on low carb or low-calorie diet, you can use the information on the peanut jar to figure carbs or calories. If you are following doctor’s orders, please verify with your doctor first.

     My husband is a diabetic and I am looking for recipes that he will enjoy. I will only post those that he likes, since he is my most loving critic. LOL. Maybe you will enjoy them as well.
